5.2 Preparing the food to be deep fried
1. Moist food must be dried thoroughly before deep frying.
2. To shorten the deep frying time and to ensure that the food
absorbs less fat, cut the food into smaller pieces.
3. When deep frying potatoes ensure that the pieces are
not too small to keep the formation acrylamide low.
Please inform yourself on the current state of research of
acrylamide in the internet.
4. When deep frying breaded food ensure that the breadcrumb
coating sticks well so that the fat / oil does not soil too heavi-
ly.
5. Frozen food should be shaken before being put into the
deep fryer to ensure that ice pieces fall off. Otherwise the
fat / oil may spill without control.
6. Season the food after the deep frying process, not in the
deep fryer. This ensures a careful treatment for the deep
fryer and the fat.
5.3 Deep Frying
5.3.1 Heat up deep fryer
1. Ensure that the deep fryer is turned off and the temperature
control knob (8) is on position ‘0’.
2. Open the lid (2) by pressing the unlock button (12).
3. Take out the frying basket (14) by pressing the unlock
button (11) and by lifting the handle of the frying basket (10)
into a horizontal position.
4. Substantiated fat must be melted before being used for
the deep fryer.
