• Filter the fat /oil, if possible after each use.
• Do not use old and contaminated fat / oil:
– Fat / oil turns brown
– Old fat /oil develops smoke at a
heating temperature of 180°C and
an unpleasant odour.
– Deep fried food tastes diff erent.

Substantiated deep frying fat should not
be heated in the deep fryer:
• If the already used fat has substantiated
in the deep fryer, remove it from the pot
(13).
• Melt the fat in a cooking pot on the
stove.
• Carefully pour the melted fat into the
cold pot (13) of the deep fryer.
