Slow Cook
This program is designed for cooking dishes at a low temperature over a
long time. It is perfect for slow cooking less expensive cuts of meat, as the
extended cooking time produces tender results. It does not include automatic
stirring action, but you can select manual stirring, if desired. Just ensure the
stirring paddle is properly fitted before adding ingredients.
Cooking times vary and depend on the food being cooked. The default
cooking time for this setting is 6 hours, but you can adjust this as per your
recipe. As a general rule, cooking food on the slow cook setting at around
85˚C should take approximately 6–8 hours, or 4–5 hours at around 100˚C.
At the end of the cooking time, the appliance will automatically enter warm-
keeping mode.
For best results:
• If the food needs to be stirred half-way through the cooking time, use the
manual stirring function when required, do not open the lid during cooking.
• We recommend searing meat and
sautéing
flavouring ingredients on the
Sear/Saut
é
setting first for better flavour development. To do this, preheat the
unit, covered, for 2–3 minutes on the
Sear/Sauté
setting.
• Add a little oil or cooking fat to the inner pot and sear meat pieces and sauté
flavouring ingredients (such as onions, garlic, ginger, chilli, etc.) for a few
minutes using manual stirring action.
• Stop the stirring action and press the OFF | KEEP WARM button.
• Add any other ingredients as per your recipe, including liquid (see the notes
below).
• Close the lid and press the ON | MENU button until the
Slow Cook
program is
selected. Keep the lid closed during cooking.
NOTE:
• Slow cooking allows for very little evaporation. If making soup, stew or
sauce, reduce the liquid called for in your original recipe. If too thick, add
liquid later.
• The higher the fat content of the meat, the less liquid is needed.
• If cooking meat with a high fat content, place thick onion slices underneath
so the meat will not sit on (and cook in) the fat.
• Some foods are not suited for extended cooking on this setting. Pasta,
seafood, milk, cream or sour cream should be added 2 hours before
serving.
