Beef Pot Roast
Ingredients
(serves 4)
1 tsp oil
1 large onion, quartered
500g beef joint (topside, blade, round) 1000mL beef stock
2 carrots, chopped into larger chunks
Salt & pepper to taste
Preparation
• Preheat the cooker, covered, for 2–3 minutes on
the
Roast
setting. Add
a little oil to the inner pot and sear the beef roast until all sides are nicely
browned. Take the joint out of the pot and set aside.
• Briefly saut
é
the onions and carrots, then place the roast on top. Add 500mL
of the stock and seasoning and close the lid.
• Check the roast periodically during cooking and add more stock, if required.
• For best results, use a meat thermometer. Your roast will be cooked medium
when the internal temperature has reached 65–70˚C, or 75˚C for well done.
Lemon & Garlic Roast Chicken
Ingredients
1 Chicken (choose a size that will fit into the inner cooking pot)
Salt & pepper to taste
4 rashers streaky bacon
2 garlic cloves, halved
1 tsp oil
1 lemon, quartered
3/4 cup chicken stock
20g butter, softened
Leaves of 2 sprigs of thyme
Preparation
• Wipe the chicken dry inside and out. Season to taste and add the garlic,
lemon pieces and butter into the cavity of the prepared chicken. Place
the bacon rashers diagonally over the chicken breasts and secure with
toothpicks, if necessary. Tie the chicken legs together with kitchen twine.
• Preheat the cooker, covered, for 2–3 minutes
on the
on the
Sear/Sauté
setting. When it is hot, place the chicken, breast side up, into the pan and
brush with oil. Cook, covered for 15 minutes.
• Press the OFF | KEEP WARM button to cancel the program, then set the unit to
the
Roast
program and adjust the cooking time to 90 minutes. Baste regularly
with stock during cooking. Allow to rest for 15 minutes before serving. Add the
chopped thyme leaves to the pan juice and pour over chicken to serve.
CAUTION:
Chicken must be fully cooked through. Insert a meat thermometer
into the inner thigh area near the breast to ensure the internal temperature
has reached 75˚C before serving.
Extend the cooking time if necessary.
