Fryer Operation

Filtering Fryer Shortening
•
Never attempt to filter cold shortening; congealed cooking oil can clog the filter pump and potentially damage
the unit. Oil must be heated to a minimum of 200°F (93°C) before filtering.
•
Parts of the Fryer may be extremely HOT! Always wear thermal protective mitts or gloves when performing
this procedure.
!
CAUTION
1. Giles recommends that after the fourth (4th) load has been cooked
in a vat, the oil should be filtered.
2. Set the
Heat Switch
of the fryer unit to be filtered to the
OFF
position.
3. Open the FFLT Cabinet Door. While wearing thermal hand
protection, disconnect the
Filter Pan Quick-disconnect Hose
and remove the empty
Filter Pan
from under the unit.

If Using Filter Paper:
Ensure that (1) sheet of Filter Paper is installed
correctly in Filter Pan and that the Hold-down Frame is securely
locked in place.
Two (2) pieces of paper are required for older
models without the permanent Filter Pan media support screen
.
If Using Reuseable Mesh Screen:
Ensure that the Screen is free of
residue and properly seated in the Filter Pan bottom. Be certain
that no debris is trapped underneath the edge gasket and that the
Hold-down Frame is securely locked in place.
5. Evenly distribute approximately 4-3/4 oz. of an appropriate Filter
Powder over the filter media surface ...
Giles #72004 is
recommended
. This filter aid will recondition the oil by removing
soluble impurities.
6. Be sure the
Filter Pan Cover
is in place. Reposition the Filter
Pan under the unit and reconnect the
Filter Pan Quick-disconnect
Hose
to the proper fitting on the Fryer.

The following describes procedures for filtering used cooking oil utilizing the built-in filtration system. The system
circulates the use oil through filter media in the Filter Pan and back to the Cooking Vat. Adhering to this process can
actually increase shortening life up to 50%. Cooking Controllers on each fry vat are preset to alert the operator with
a filter alarm after every fourth (4th) load cooked.
Two different types of filter media can be used with the EOF Fryer, either disposable Filter Paper or a renewable,
stainless steel, micro-mesh, Filter Screen (SSFS)
