Fryer Operation

EOF-BIB/FFLT/24/24

5-04. Boil-in-Bag Procedure

2. Ensure that the Drain Valve Handle is pushed in and

locked in the

CLOSED

position (tab through

opening & secured behind panel).

3. Fill the Vat with clean water to the

FULL

level

mark.

4. Set Power Switch

and confirm the Digital

Thermostat

setpoint is at

200°F

. If needed, set

according to the instructions in

Section 5-02.2

5. The amber

HEAT

light

illuminates and the water

bath will begin heating.

6. Allow the water bath to pre-heat to 200°F before

using. Stir the water occasionally to ensure thorough
and even heating. Water bath has
reached setpoint when the amber

HEAT

light turns

OFF

1. Ensure the Power Switch

is in the

OFF

position.

This section describes the general rethermalizing process in the EOF-BIB water bath unit for packaged frozen food

products. Only a general explanation is given here, always follow specific Deli procedures and Job-Aids, as the

process may vary from user to user.
