new Giles equipment, model EOF-BIB/FFLT/24/24, manufactured by Giles Foodservice

Equipment; Montgomery, Alabama (USA), hereafter referred to as "Giles". This model is a multi-purpose, high-

capacity, electric Fryer, featuring two (2) 24” frying vats, one (1) 20” Boil-in-Bag (BIB) water vat for rethermalizing

pouches of frozen food, and a built-in Dump Station. Every unit is thoroughly inspected and tested prior to ship-

ment, and with proper care and maintenance, will provide years of trouble-free service.

To help protect your investment in this state-of-the-art cooking equipment, we recommend taking a few moments

to become familiar with the procedures in this Manual, pertaining to installation, operation, cleaning and mainte-

nance. Adhering to these recommended procedures minimizes potential for costly downtime and equipment

repairs. Please retain this Manual for future reference.

Micro-Processor Cooking Controller

: Controls cooking oil temperature and cooking time. Two independent basket

timers with four (4) programmable presets available on each. Features energy-saving COOL mode, and a “Force

Filter” function if enabled.

Digital Thermostat (Water Vat Unit)

: Easy to use digital thermostat controls temperature of BIB water vat, up to

200° F (max).

Oil Filtration System

: Built-in oil filtering system servives all fry vats; can extend the life of cooking oil by as much as

50%.

Dump Station (FFLT - Fried Food Landing Table)

: Built-in dump station; convenient location to place cooked product

for draining after frying. Oil drainage is returned to the Filter Pan.
