The deviation may be due to incorrect testing conditions:
- insufficient attention during 2nd minute of mixing,
- extrusion passage dirty,
- lab temperature too high (> 20°C and dry air),
- excessive or abnormal handling of patties,
- incorrect oiling of the extrusion plate and rolling accessories,
- high oil acidity level.
Inspect the mixing blade,
the extrusion passage,
and the play between
mixing blade and
extrusion passage
Adjust and replace
as needed
