80 g alfalfa

PREPARATION:
1.
Roast the kernels and seeds in a dry pan.
2.
Peel the kohlrabi, parsnips, celeriac and carrots. Cut them into strings and keep them separated.
3.
Pour a dash of sesame oil into a wok and fry the shallots and garlic.
4.
Now add the kohlrabi, parsnips, celeriac, carrots and bay leaf to the wok and cook until the
vegetables are crispy and done.
5.
Finally, add the lemon juice, kernels and seeds (partially) and chopped parsley. Mix well and
flavour with salt and pepper.
6.
Garnish the salad with the alfalfa and the remaining kernels and seeds.
Baked apples with cinnamon and super fruit (FOR 4 PERSONS)
INGREDIENTS:
•
dash of olive oil
•
4 apples
•
1/2 tsp cinnamon
•
2 tbsp goji berries
•
2 tbsp pumpkin seeds
•
2 tbsp mulberries
•
2 tbsp inca berries
•
2 tbsp cranberries
PREPARATION:
1.
Cut the apples into strings and bake them together with the cinnamon in a pan with some olive oil
until golden-brown.
2.
Serve on a plate and sprinkle with the super fruit.
Crispy salad with mango sauce (FOR 4 PERSONS)
INGREDIENTS:

1 mango, peeled and diced
•
250 ml fresh pineapple juice
•
1 dash of chili powder
•
1 tsp fresh gingerroot, finely chopped
•
1 tsp sesame oil
•
1/2 celeriac
•
1/2 cucumber
•
1 thick stem of a broccoli stalk
•
2 tbsp mixed seeds
•
1 bunch of coriander, coarsely cut
