7. With the milk spinning, slowly lower the jug. This will bring the steam tip to the sur-
face of the milk and start to introduce air into the milk. You may have to gently break
the surface of the milk with the tip to get the milk spinning fast enough.
8. Keep the tip at or slightly below the surface to continue maintaining the vortex. Tex-
ture the milk until sufficient volume is obtained.
9. For heating the milk, lower the tip beneath the surface, but keep the vortex of milk
spinning. The milk is at the correct temperature (60-65°C) when the jug is hot to
touch.
WARNING:
Do not touch the steam wand as they will be hot!
Do not
remove the steam wand from the milk as long as steam is still generated to avoid hot
milk from splashing vigorously. Always switch the control dial back to the central standby
position, before removing the milk jug.
10. To stop the steam, turn the control dial back to the central standby position. Wait a
moment until the auto-purge function has produced some steam at the group head.
Then, lift the steam wand by the handle and remove the milk jug.
11. Wipe the steam wand immediately with a damp cloth. Then turn the steam wand
back to facing the drip tray.
12. To purge the steam wand, press the SELECT button to activate the HOT WATER func-
tion. Turn the control dial to the right steam position. After some hot water is given
off, turn the control dial back to the standby position.
TIP:
Consume textured milk, before the milk begins to separate.
13. Pour the hot milk into your coffee and spoon the froth on top.
We recommend the following mixture:
• Cappuccino: 1/3 espresso, 1/3 hot milk, 1/3 milk froth
• Traditionally, latté is served in a high glass: 1/3 espresso with a layer of 1/3 hot
milk above, and a top layer of approx. 1 cm milk froth.

Even after operation, hot steam and hot water
could escape from the steam wand. Additionally, the metal parts of the steam wand will
be very hot. Do not hold your hands near the tip of the steam wand. Do not touch the
metal parts of the steam wand, with the machine switched on and some time thereafter.
The HOT WATER function can be used to preheat cups and the portafilter or give off
hot water manually for a mug of coffee, tea, hot chocolate etc. Via the SELECT button,
you can toggle steam function and hot water function as you like.
