DEEP FRIED ASPARAGUS
2.5 - 3.0 liters peanut (or vegetable) oil for frying
1 lb. fresh asparagus
1 cup buttermilk
1 egg
1 cup all-purpose flour
1-1/2 cup panko bread crumbs
seasoned salt/pepper to taste

1.Preheatoilto356ºF.TheblueWORKINGlightwillilluminate
astheDeepFryerheatstheoil.
2.Placeflouringallon-sizelockingplasticbag.
3.Combinebuttermilkandegginashallowbowlandmixwell.
4.Rinse6asparagusstalksandplacewetstalksintotheflourbag.
Shakewelltocoat.Removefrombagandshakeoffexcessflour.
NOTE:Ifverythick,peelasparagusstemswithvegetablepeelerfirst.
5.Placeflouredasparagusintothebuttermilkmixture,
thendredgeinthepankobreadcrumbs.
6.PreparestalksuntiltheblueWORKINGlightturnsOFF,
andtheDeepFryerisreadyforuse.
7.Usingovenmittsandheat-resistanttongs,place6battered
asparagusstalksintothefryerbasket.
8.Lowerfryerbasketintooilandaddlid.
9.Fry2to3minutes,watchingthebrowningprocessthroughtheviewingwindow.
10.Usingthetongs,turnasparagus.Allowtocookfor
another2to3minutesuntildone.
11.Alwaysusethefrybaskettoliftasparagusoutoftheoil;hookthebaskettothe
rimandallowoiltodrain.Thenremoveasparagusfromthefrybasket
andontoaplateofabsorbentpapertowels.
12.Addseasonedsaltandpepperwhilewarm.
13.Serveatroomtemperaturewithalemontartaror
honeymustarddippingsauce.
