CHARACTERISTIC OF THE DEVICE
The housing is made of stainless steel. The tabletop is mounted on a base with four feet, by means of which
you can level the fryer. Leveling is possible within the range of ±20mm.
The main components of fryers series 97251.. include: worktop with one 17L tank (with cold zone) and three
main burners, each of them with a thermal power of 5.0 kW. The nominal thermal power of the fryer is 15.00
kW and all burners are controlled by a single thermostatic valve.
The main components of fryers series 97252.. include: worktop with two independent 7L tanks (with cold
zones) and two main burners (one for each tank) with a thermal power of 6.0 kW for each burner. The nominal
thermal power of the fryer is 12.00 kW and each burner is controlled by its own thermostatic valve.
On the front of the appliance, behind the door, there is, for each tank, a control panel with a temperature
controller, a safety thermostat and a spark generator button. Next to the control panel, behind the door, there
are the valves used to drain the used oil from each tank. There is a waste oil tank under the valve. The tank
will hold 17L.
When emptying the tank, keep in mind that the oil may have a high temperature; wait until the oil has cooled
down.
If the oil temperature in the tank exceeds 230°C, the safety thermostat will trigger and the burner shuts down.
Re-activation is possible after the appliance has cooled down and the thermostat is reset using the appropriate
thermostat button.
2.
FRYER INSTALLATION

The fryer should be placed on a stable surface in a closed room with the power off. Then it must be leveled
using the adjustable feet.

Place the fryer so that it is accessible at least from the front. There should be a wall made of non-combu

stible materials behind the device

The device can be set up in a row of appliances. If the appliance is not set up in a row with other devices
of the same line, the walls adjacent to the appliance (rear and side) should be made of non-combustible
materials.
CAUTION!! It is not allowed to turn on the appliance when the tank is empty or to pour water
when the oil in the tank is hot, as this will cause irreparable and sudden damage to the bottom of
the tank and in case of pouring water into hot oil, oil inflammation and fire.
If the fryer is installed in a heating line, you must prevent the fryer from being placed next to the
pasta maker, or the bain maries. Pouring water into hot oil may cause a fire.
The appliance is sold for a specific type of gas, as certified on the rating plate. Any change to the
type of gas can only be made by a qualified and authorized installers and must be included in the
warranty card attached to the appliance. The devices sealed and protected by the manufacturer
could only be handled by qualified installers after authorization and training provided by the Tech

3. CONNECTION
3.1.
Conditions for connection to mains:
You must check if voltage in grid is equal to the grid indicated on device’s rating plate

To plug the device in electricity network you must perform plugging of the power cord in the terminal box
placed on the back wall of the device.
The power cord with a plug IS NOT the part of the set and
you must buy it.

You must necessarily join the device to the installation of equalising electrical potentials with the help of
