5 Default values of the factory pre-set quick programs
The factory pre-set blast chilling and blast freezing programs of the equipment are pre-set with the control values shown in
Table 2.

In diagrams 1 and 2 the functional difference between soft and hard functions can be seen. In both processes, hard function is
controlled according to the temperature measured by the product probe. Compared to the soft chilling, the start temperature
at the beginning of the hard function process is decreased considerably to accelerate the process. This accelerates both blast
chilling and blast freezing of products when the internal heat transfer resistance is small. Products with greater heat transfer
resistance need softer chilling to prevent the surface from freezing when it is still hot inside the product. In the blast freezing
process, freezing the surface of the product before the core of the product makes the process slower.
