3 General properties of blast chilling / blast freezing equipment
The equipment has been designed for chilling and freezing of food in professional kitchens.
The containers used are according to EN 631 standard, open GN 1/1 -40 steel dishes, with no more than 35mm product
depth for the nominal capacity according to EN 17032. GN 1/1-65 dishes with 50mm product depth can also be used in the
equipment, however the increase of layer thickness makes the defrost time longer and total capacity smaller.
The equipment programming options are:
• Four quick programs, factory pre-set according to national legislation (Chapters 2 and 9).
• 20 options for personal programs that can be changed when required (Chapter 10.1).
• Separate function for the freezing process of fish (Chapter 4).
The equipment also has a storing function to make daily use easier. This is automatically enabled followed by the completion
of selected program.
The equipment is equipped with auto-defrost to ensure continuous function. To ensure effective removal of condensate water
the equipment should be connected to an appropriate waste outlet.
4 Freezing of fish
Anisakis simplex roundworm is a parasite of North Sea whales. Infecting larval stages of this parasite are found in fish of the
North Sea area. Due to the parasite risk, certain fishing products must be processed by freezing. Examples of such products
are: pickled raw fish, cold smoked fish, salted roe, fish for sushi and marinated fish (fillets for the retail trade need not to be
frozen if they are sold fresh).
EU regulation

regulates the freezing process of certain fish species if they are to be sold raw as follows:
• to -20 °C or lower temperature for at least 24 hours or
• to -35 °C or lower temperature for at least 15 hours.
If the fishing product has been stored frozen (-18 °C) for at least 96 hour a separate freezing process is not necessary.
Porkka blast freezers have a separate freezing function for fish.
