2 pounds skinless boneless pork shoulder - cut into 1 1/2 inch chunks
3 cloves garlic
1 tablespoon kosher salt
½ tablespoon of fennel seeds - toasted
1 teaspoon freshly ground pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
½ teaspoon crushed red pepper

Place the pork cubes in the freezer for 15 minutes.

Assemble the food processor with the S blade.

Add all the ingredients into the food processor bowl. Pulse for 6 Kmes.

Turn the food processor dial to 5 and process for 1 minute.

Don’t over mix, the sausage should be crumbly.
