Makes 1

cups
3 large egg yolks
1 teaspoon fresh lemon juice
1 teaspoon white vinegar
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon sugar
½ teaspoon cayenne pepper
1½ cups canola oil

Assemble the food processor and fit it with the emulsion disc.

Add the yolks, lemon juice, vinegar, mustard, salt, sugar, and cayenne to the
bowl. Turn the food processor dial to 6 and process for one minute. Slowly
drizzle the oil in through the feed tube allowing it to fully integrate as added
unKl all the oil has been incorporated.

Store in an airKght container and refrigerate. Use within 1 week.
