Caesar Salad Dressing
Ingredients
2 Egg yolks
3 tbsp White wine vinegar
1 tbsp Lemon juice
2 tbsp Parmesan cheese
½ tbsp Dijon mustard
½ tsp Anchovy, mashed up
¼ tsp Worcestershire sauce
Salt & pepper to taste
3/4 cup Olive oil
Preparation
• Place the egg yolks into the blender jug, cover, and blend using the
Pulse
setting
about five times.
• Add the remaining ingredients through the pouring hole in the lid, except for the
oil, and pulse to blend for 20 seconds.
• Add the oil and mix again on high speed for 30 seconds, or until creamy.
• Place in a covered container and refrigerate until ready to serve.
Cauliflower and Pea Soup
Ingredients
1 tsp Oil
1 Onion, chopped
1 Celery stalk, chopped
500g potatoes, peeled and chopped
500g cauliflower florets
1.5L Water (or half water, half stock)
½ cup Peas, frozen
Preparation
• Sauté the onion and celery in the oil in a large pot on the stovetop until soft.
• Add the potatoes, cauliflower and water and bring to the boil. Simmer,
uncovered, for about 20 minutes. Let the soup ingredients cool to room
temperature.
• Place the cooled soup into the blender jug, cover and blend on medium to high
speed until smooth.
• Return the soup to the pot, add the peas and heat gently on the stovetop until
hot.
