Dips and Sauces
Bean Dip
Ingredients
1 (400g) can Beans, drained (red kidney, black, white, pinto)
1/4 Onion, sautéed
1–2 Garlic cloves, sautéed
1/4 cup Roasted red peppers, drained
1/4 cup Chicken or vegetable stock
1 tbsp Balsamic vinegar
1 tsp Cumin, ground
Cayenne pepper or chilli powder to taste (optional)
Method
• Sauté the onion and garlic in a lightly greased pan on the stovetop until soft.
• Drain most of the liquid from the canned beans.
• Place all ingredients, in the order they are listed, into the blender jug, cover and
blend on the
Pulse
setting until the dip has reached the desired consistency.
Serving suggestion
This dip is great both warm and cold. If you prefer the warm version, try adding 1/4
cup of grated cheddar cheese to the ingredients before blending. After blending,
remove the dip from the blender jug, place it in a microwave safe bowl, sprinkle
with extra grated cheese (optional), cover loosely and microwave for about 2–3
minutes until warm throughout. Stir and serve immediately. The warm version goes
perfectly with corn chips or sliced crusty Italian bread.
Sun-dried Tomato & Cashew Dip
Ingredients
150g Sun-dried tomatoes, drained
150g Raw cashews
½ Red capsicum, deseeded and quartered
1 Garlic clove
1 tbsp Parmesan cheese, grated
2 tbsp Olive oil
1 tbsp White wine vinegar
Preparation
• Place all ingredients, in the order they are listed, into the blender jug, cover and
blend on the

setting until you have a chunky style dip.
