Cleaning and Preventative Maintenance

Daily probe cleaning and handling

1.  Spray Dawn

®

 detergent onto 

a bottle brush and scrub each 

probe for 2 minutes.

2.  Allow the hot water from 

the faucet to run until it is 

hot. Rinse each probe under 

hot water. 

3.  Spray non-quartenary sanitizer solution onto each 

probe and allow to air dry. 

Always:

—   Always

 handle probes with care.

—   Always

 pull the probe using the plastic head, not the 

cable.

—   Always

 clean probes immediately after use; scrub 

with soap and water.

—   Always

 hang probes on rack immediately 

after cleaning.

Never:

—   Never

 soak probes in the sink.

—   Never

 remove probes from beef by the cable.

—   Never

 unplug probes from oven by pulling cable.

—   Never

 get probe cables caught in oven door. 

—   Never

 drop probes against the oven after they are 

pulled from beef. 

—   Never

 clean probes with harsh chemicals or bleach.

Weekly control panel cleaning

Lightly spray Dawn detergent onto a clean towel and wipe 

the control panel. Do not use excessive moisture. 

Weekly manifold cleaning

1.  Spray Dawn detergent onto a bottle brush and scrub 

the manifold completely.

2.  Spray clean water onto a clean towel and wipe off the 

manifold.

3.  Spray non-quartenary sanitizer solution onto a clean 

towel and wipe off the manifold. 

NOTE: 

  Do not spray cleaning products directly into the 

manifold. 

Check the cooling fan

While the oven is warm, check that the cooling fan in the 

oven control area is functioning.  The fan is located at the 

back of the unit, toward the top.  

Check overall condition of the oven

Check the oven once a month for physical damage and 

loose screws. Correct any problems before they begin to 

interfere with the operation of the oven.

Do not use oven if controls are not properly functioning

Refer to the Trouble Shooting Guide located in this 

manual or call an authorized service technician.

NOTICE

To protect stainless steel surfaces, 

completely avoid the use of abrasive 

cleaning compounds, chloride based 

cleaners, or cleaners containing 

quaternary salts. 

Never use hydrochloric 

acid (muriatic acid) on stainless steel. 

Never use wire brushes, metal scouring 

pads or scrapers.
