2.1 Grease separators: general function

1 = Wastewater from kitchens contains a mixture of
water, fats, oils, grease and residue solids
2 = Fats, oils and grease have a density less than
water. Under the correct conditions, these
contaminants will naturally float on the water
surface
3 = Solids have a higher density than water and will
fall to the bottom of the separator
4 = Separated fats, oils, grease and solids are
retained in the separator body whilst purified
wastewater passes through the separator via a
submerged outlet
5 = Periodic removal of the entire contents of the
separator is required. This is normally carried out
by a specialist waste contractor

Kitchen wastewater (1) flows into the distribution unit (2). The distribution unit provides the
wastewater stream in equal volumes into the grease separators (3).
For maintenance and disposal it is strongly recommended to equip the inlet
piping with two appropriate shut-off valves
(4).
