3.2. Water System Components
The ACTO system includes the following main components:
a.
Collection and condensation tank . It is a steel tank placed under the cooking
chamber and connected to the chamber drain. It is used to collect the washing fluid.
Whereas, during cooking, it collects the condensation coming out of the cooking
chamber and also partially condenses the steam coming out of the chamber.
b.
Drain valve . It is a motorised ball valve that connects the collection tank with the
siphon. During washing it is closed in order to allow the fluid to gather inside the
tank. During cooking it is open to allow the condensation to exit towards the siphon.
It is equipped with a limit switch that switches when the valve is closed.
c.
Siphon . It collects the liquid coming out of the tank through the drain valve and
makes it come out of the oven discharge. A PT1000 probe is inserted in the siphon
to measure the temperature of the drain outlet water.
d.
Collection tank overflow . It is a pipe that connects the collection tank with the
siphon, bypassing the drain valve. It is connected to the tank at a higher level than
the nominal operating level. It intervenes if the drain valve is broken or clogged,
preventing the liquid level in the tank from rising excessively and thus overflowing
inside the cooking chamber.

Washing pump . It is the pump used to recirculate the washing liquid, taking it from
the collection tank and distributing it in the chamber through the distribution circuit.
f.
Flow distributor . It is an L-shaped fitting (made of nylon reinforced with glass balls)
used to connect the pump outlet pipe to the various washing fluid distribution pipes.
The two detergent and rinse aid/descaler inlet pipes are also connected to it.
g.
Collection tank OR . These are the sealing ORs between the collection tank and the
cooking chamber. When replaced, they must be greased with SILICONE GREASE.
h.
Chamber water inlet unit . Water inlet for steam generation.
i.
Washing/drain water inlet unit . Water inlet for washing and drain cooling.
j.
Steam vent pipe with butterfly valve . Vent pipe for steam outlet.
k.
Washing flow piping . A pipe goes on the top of the oven to insert the washing fluid
into the cooking chamber; the other is connected to the vent pipe under the butterfly
valve for washing the pipe itself.
