As soon as the liquid in the pan starts to boil, reduce the flame to the minimum needed
to keep it simmering.
Use only pans and flat-bottomed frying pans.
When using a pan smaller than recommended, the size of the flame will break out from
under its bottom and cause the handle to overheat.
