in

during

Alcohol
inhibits
the
freezing
process.
To
add
alcohol
to
a
recipe,
add

mixture

semi

stiff.
The
flavor
of
a
sorbet
will
depend
greatly
on
the
ripeness
had
sweetness
of
the
fruit
and
/or
juice.
If
fruit
is
too
tart,
add
sugar,
if
the
fruit
is
very
ripe,
decrease
or
omit
the
sugar.
Freezing
subdues
Sweetness,
so

recipe

not

quite
as
sweet
when
frozen.
Artificial
sweeteners
can

used
as

substitute
for
sugar.

Heat
affects

sweetness

Only
add
artificial

cold
or
have

completely
cooled.
When
a
recipe
calls
for
heating
liquid
to
dilute
sugar,
omit
the
heating
process
and
simply
stir
in

sweetener
until
it

well
dissolved.

FAT
RECIPES
For
lower
fat
content,
substitute
1%milk
for
whole
milk,
whole
milk
for
half
and
half,
and
evaporated
skim
milk
for
whipping
cream.
Higher
fat
dairy
products
‐

as
whipping
cream
‐
create
a
smooth,
rich
and
creamy
dessert.
Lower
fat
dairy
products
create
