Method
Mix together the marinade ingredients in a large bowl and mix well. Add the prawns and
leave to marinate for a minimum of 20 minutes or up to 2 hours.
Remove the prawns from the marinade and pre-heat the press on setting 2. Brush the
plates with oil and place the prawns on the press, cook for 2-4 minutes, until they have
changed colour and are lovely and pink, take care not to overcook.
Serve with cucumber raita and a tomato and cucumber salad on the side.

Great mid-week supper
Ingredients
(Serves 4)
For the marinade:
Finely grated zest and juice of 1 lime
1 garlic clove, crushed
2.5cm piece ginger, peeled and grated
1 tbsp Thai fish sauce
1 tbsp honey
1 tbsp olive oil
Pinch of dried chilli flakes (optional)
4 x skinless salmon steaks or fillets
Chopped coriander springs to serve
