STEAM: Heating is from steam produced from water at 99 ºC and at atmospheric
pressure, produced in a steam generator.
The fluepipe opens automatically in convection mode. In all other modes it remains closed.

TEMPERATURE AND TIME / SPIKE / DELTA SELECTION

DELTA SELECTION
Difference between the core temperature and the oven temperature.
To select, press the function selector (10). All the options light up and the selected option flashes.
Turn the general option knob (18) to change the selection and select the delta option (11.1). To
confirm the selected option, press either the function selector button or the general selector knob.
The oven temperature is always 50 ºC higher than the temperature recorded by the core probe with
the Delta function.
When the Delta function has been selected, insert the spike into the food and close the oven.
The core temperature at which the food is to be cooked is displayed in window 9.2. To change this
temperature, press core time/temp setting button (8) and change the value with the general option
knob.
To confirm the new temperature value for the Delta function, press the core time/temp. setting
selector button (8) or the general option knob (18).
The true temperature at the centre of the food is displayed in window 9.1.
Window 7.2 displays a temperature 50° higher than the true core temperature (9.1) and window 7.1
displays the true temperature of the oven.
Next select the cooking mode as described in the previous paragraph.
After selecting the parameters, press the START/STOP button (19) and the oven starts to work.
The range of temperatures available in Delta mode are as follows:

TIME SELECTION
To select the time function, press the function selector (10). All the options light up and the selected
option flashes. Turn the general option button (18) to change the selection and select the time option
(11.2). To confirm the selected option, press either the function selector button or the general option
knob.
Select the cooking time by pressing the time selector (8) and turning the general option knob until
the required time is obtained. Confirm this value by pressing the time selector (8) again or by pressing
the general option knob (18).
