Chapter 5 Equipment Set-up and
Close Procedures
5.1 Crew Mode

The Combi oven performs the
following routine when switched ON.
Self-test performed
Hood switched on
The oven light turns on
The Start page is displayed
When the start-up checks are finished the oven
always starts in Crew Mode.
Select product group preheating to background
temperature.
Recipe menus displayed will be preheating to
lowest setpoint in menu group or background
temperature (whichever is lower).
Select a recipe desired
The oven will automatically start the preheating
process. No cooking should be done at this time.
Wait for the oven to preheat (approximately 3-5
minutes).
Select the racks and position(s) for that product.
The shelf positions selected are highlighted in
yellow.
