2 TECHNICAL SPECIFICATIONS
2.1 General description of the machine
Machines in the EVOPASTO’ range, covered by this manual, are pasteurizers for producing fresh artisan gelato mixtures.
The EVOPASTO’ range includes the following models:
- Evopastò 60
- Evopastò 120
Operation of the mixing impeller, in the tank, allows mixing of the ingredients necessary for making gelato mixtures.
During the pasteurising cycle, the fats are dissolved and there is a significant reduction in the proliferation of pathogenic
bacteria.
Plus, once the pasteurising cycle is completed, the EVOPASTO’ machines hold the mixture at the temperature required by
the relevant regulations.
All of the machines are equipped with a dispensing tap with washing incorporated in the tap guaranteeing correct hygiene
after each mixture dispensing operation.
