The air valve position should only be read when standing directly in front
of the machine.
The instructions for using the “labyrinths” are indicated in the table below according to the percentage of fat in the cream.
A labyrinth (1.5 measurement) is supplied with the machine for
normal cream (33…35% of fat).
If other types of cream are used, a specific labyrinth must be ordered from the retailer or directly from the manufacturer.

5.4 Adjusting the air valve
The function of the air valve is to regulate the required increase in volume of the liquid cream by adding different amounts of air.
The air valve adjustment field ranges from “0 to 9”. In the “0” position
the valve is closed and no air is pumped into the product. To increase the
amount of air in the liquid cream, turn the air valve knob in an anticlock-
wise direction.
