The yoghurt can be kept in the refrigerator for around a week.
Keep some yoghurt back for the next batch. You can repeat this process around 10 times
and then the yoghurt bacteria are all used up. For a new batch, you then once again require
purchased yoghurt or freeze-dried lactic acid bacteria.
Yoghurt For Any Taste
Jam, honey, caramel, fruit, muesli or spices: You can add some of the things you like best to your
yoghurt.
• If you want to add fruit: As fruit acid kills the lactic acid bacteria and the fermentation
could not therefore take place, the inoculated milk must not be mixed with fresh fruit. We
therefore recommend that you mix fresh fruit in with the finished yoghurt or place boiled
fruit or jam into the jars first and then add the inoculated milk. You can of course also mix
jam, honey or boiled fruit with the finished yoghurt.
•
If you would like to add flavour to the yoghurt, you can either add a few drops of flavouring
or extract to the milk which you are heating during the preparation phase, or you can place
the spice, the peel etc. into the milk for around 12 hours and then remove everything before
you start making the yoghurt.
• You can very easily use yoghurt to make Ayran, the refreshing Turkish drink: Stir yoghurt
together in a ratio of 2 to 1 with iced water and a little salt to create a froth (ideally in a food
processor). Garnish with lemon balm or peppermint.
• Or you can leave out the salt and add sugar and mango to the yoghurt / water mixture. You
will then get a mango lassi, which is a popular drink in India.
