Cleaning & Maintenance

Cleaning Procedure

• 

A comprehensive cleaning procedure has been 
developed by Chik-fil-A to maintain the equipment at 
top working condition and to prolong product life cycle. 

• 

Only authorized personnel are given access to the 
details on the Chick-fil-A website. Website is password 
protected. 

• 

Ensure to follow all safety requirements listed in this 
manual and specified by CFA.

• 

Always refer to the CFA website for the latest 
instructions.

• 

This section summarizes the main process on cleaning a 
Garland Backyard Grill.

CAUTION

NO CLEANING CHEMICALS should ever be applied to 
the top or bottom grates.

Cleaning Schedule

• 

The top and lower grill plates are to be cleaned with grill 
brush between batches. 

• 

Follow the CFA recommended cleaning schedule to 
clean and sanitize grill exterior throughout the day 
(once every 2 hours).

• 

Perform Midday Clean (after peak sales  period) and 
End-of-Day Clean specified by CFA.

CAUTION

Grease Drawer

Monitor the grease level in the grease drawer. Empty 
the grease drawer as required.

To avoid burn injuries, handle the grease drawer 
and the contents carefully. Use Personal Protective 
Equipment (PPE).

Cleaning after Each Batch

• 

Frequency: Every time immediately after product is 
removed

• 

Areas to clean: Top and bottom grill grates, and empty 
grease drawer as required.

• 

Method: Use the grill brush to remove burned food 
particles and then use the silicone squeegee side to pull 
the debris into the grease drawer.

CAUTION

NO CLEANING CHEMICALS should ever be

Benefits: To prevent food residues to bake onto grates 
causing excessive carbon build-up.
