5.3 ICE-CREAM PRODUCTION
After cleaning and sanitation operations have
been carried out, draw the dispensing needle
out (see picture); make sure that the machine is
not on duty otherwise STOP it by means of
pushbutton 1, pour the mix into the tank (max. 4
litres) at conservation temperature and wait
until the cylinder is filled;
Wait until no more air comes out of the hole of
the vat coupling and then insert the mix feeding
tube into its seat inside the tank and place its
regulator on position 0 (closed)
At this point press the pushbutton 3
PRODUCTION to enter the mix program. The
corresponding led lights up to confirm that the
program has been entered, the beater motor
first and 2 sec. the compressor start up until the
selected consistency level has been reached.
Before the set value has been reached, the led
of pushbutton 3 blinks to indicate that the ice
can be drawn out.
Before dispensing the product, it is necessary to position the mix inlet regulator
according to the product viscosity.
For most part of mixes, the correct opening corresponds to position 2; anyway, these
values are indicative: the correct opening shall be selected according to the viscocity and
to the quantity of product to be dispensed.
Once the consistency level has been reached,
the compressor motor stops, while the beater is
stopped with a delay of 5 sec. Every 10 min., if
no ice cream delivery takes placed, an apposite
control manages the beater and makes the
electronic control inspect the ice cream
consistency and arranged the compressor
starting up to restore the most suitable
condition.
In case it is needed to dispense cones in rapid
sequence without compromise the machine
working, the mix inlet regulator should be set on
total open position and the piston limiting device
should be fit (see picture).
