6.3.2 EXTRACTION AND PARTIAL FILLING
To extract the product ready for sale, refer to the
following instructions:
- Lift the lid of the vessel with the product you wish to
withdraw (Fig.1).
- Remove the scoop from its housing.
- Withdraw the product is much as you wish.
- Bring back the scoop in its housing.
- Close the lid to allow the machine to perform
periodical interventions to restore product texture.
- To restore the correct amount of the product in the
tub, you may at any time add fresh liquid mixture
and proceed with a new production cycle setting the
desired time on the timer (Fig.3-4).
Small amounts of added fresh product require short
batch freezing times; adding greater amounts of
mixture entails longer batch freezing times.
To reduce batch freezing times, the liquid mixture
added to integrate the residual product should
always be close to 0°C.
