MAINTAINING CAST IRON GRATES
Burning in cast iron grates
Grates made from cast iron need to be burned in to protect the metal from rusting
and to create a non-sticky surface. Cast iron grates can be burned in in 3 easy
steps:
1.
Clean the cast iron grates with soapy water, rinse thoroughly and wipe dry.
2.
Grease the grates completely. Use fat with a high percentage of saturated fatty
acids, e.g. coconut fat, coconut oil or lard.
3.
Place the grates onto the grill, close the lid, and burn them in for 30 minutes
on the highest setting. This way, the fat is burned into the cast iron permanent-
ly creating a protecting patina.
CLEANING AND MAINTENANCE OF THE INFRARED CERAMIC
BURNER
The ceramic brick cannot be cleaned. Fat and meat juices dripping onto the ceramic
brick will combust. Hence, staining of the brick and baked-on residues are normal
and do not affect the burner’s performance.
WARNING:
Under no circumstances shall the ceramic brick be cleaned
with water and/or detergents. If something falls through the protective
grid and is not burnt completely, adjust the burner to the highest heat
possible and let all residues combust for 10-15 minutes.
Make sure to only cook non-marinated grillables on the ceramic brick. Salty and
acidy marinades or pepper may damage the ceramic brick when dripping down
during cooking over long periods of time.
