Tortilla Making Troubleshooting
Problem 1: Tortilla has broken edges, grainy appearance and some holes.
Cause Solution
Better proofing
environment or use
proofing box.
Add more water
to mix.
Poor proofing
environment.
Not enough water
in mix.
Allow longer
proof time.
Dough not proofed
long enough.
Problem 2: Tortilla size changes from same dough batch.
Cause Solution
Dough divided
unevenly by operator.
Dough divider needs
adjusting.
Dough balls are not the
same weight or shape.
Problem 3: Tortilla size changes, dough ball from different batch.
Cause Solution
Fix proofing
environment, or use
proofing box.
Check if dough-mixing
was done correctly.
Dough not controlled
from batch to batch.
Measure ingredients
more carefully.
