Daily cleaning

areas which are normally not accessible, after having removed the guards
mounted with screws;

the area beneath the machine, which can be accessed by pushing the machine
aside as indicated in
“3.1.4 Subsequent handling” on page 21
.
Proceed as follows to clean the machine:
1) remove any residue of dough/flour from all parts of the machine, using soft
plastic scrapers or soft brushes;
2) remove all dirt with a vacuum cleaner;
3) clean off any stains with water at ambient temperature.
7.3.1.1 Cleaning the dividing chamber and main piston (ref. 1 Fig. 13 on page
51)
Cleaning the dividing chamber is essential in order to ensure that the machine
operates normally.
To access the dividing chamber, proceed as follows:
- remove the interlocking upper guards, each of which is connected to a safety
microswitch;
- remove screws (
ref. 7 Fig. 13
);
- rotate the hopper and tip it onto its side as shown in
Fig. 13
;
- extract the blade (
ref. 2

);
- clean thoroughly the blade (
ref. 2

- extract the piston (
ref. 1

- clean thoroughly the piston (
ref. 1

- finally, carefully clean the piston (

) housing chamber;
- refit the piston (

- insert the knife (

), paying attention to the lever (

should be inserted on the support knife (

- put the hopper back into position and tighten the screws (

On a daily basis
, at the end of each day of production, the machine must be kept
perfectly clean and hygienic, above all as regards the following areas:

Do not use metal tools for removing dough/flour residue, nor for any
other cleaning operations.
z
Do not use acid or basic solutions to clean off stains; aggressive
chemical agents can damage the surfaces of the machine.
z
Do not direct jets of water at the machine to clean it.
