Roast pork

Serves approx. 6

1 kg joint of pork
Salt, pepper and paprika
1 tsp mustard
30 g butter or margarine
100 ml double cream or crème fraîche
Cornflour

Method

1. Season the meat with salt, pepper
and paprika, and spread over the
mustard. Dot with butter, place in a
roasting dish, cover and cook for about
30 minutes.

2. Add the cream/crème fraîche or a
little water and continue to roast
uncovered until done.

3. When ready, transfer the meat to a
serving dish. Add water to the juices in
the pan and thicken with cornflour.
Carve the meat, and serve with the
gravy.
