soaked with water. The elasticity of the
sponge and the pressure of the water
facilitate the elimination of the residuals
from the top of the plate.
Clean the inner part of the Head and the
seat of the Barrel with a wet rag paying
special attention to out-of-reach areas,
with the aid of a thin tool. Use a damp
cloth to thoroughly clean the cover on the
feed pan.
Clean the machine body only with
lukewarm water, a mild detergent and a
damp cloth. Never use products
containing hydrocarbons, alcohol,
solvents (in particular for plastic elements
like the feed pan, window and cover).
To prevent damages to the electric and
electronic parts, avoid wetting the
thermostat and the control buttons.

Never use a direct spray of water.

Use the utmost care (when cleaning)
with the areas in contact with the
product. Meat residues, dust or similar
may accumulate under the machine.
Clean carefully with a wet sponge. If
necessary use a long and thin tool or
slightly lift the machine.
Reassemble the washed parts only
when you start working with the machine
again (see page 18).

Regular controls

Check for tear and wear of the Plate
(n.2 photo R) and of the Knife (n.4
photo R).
The Plate and the Knife must be
replaced when the sum of the thickness
of each part is reduced by 3mm as
compared to the initial values (for the
Enterprise version):
22 Plate + Knife - 20 mm
32 Plate + Knife - 23 mm
Replace both parts.
The Knife and the Plate must
always work together.
For Unger series, also replace all the
remaining plates and knives.

Pour faciliter le nettoyage des orifices de
la plaque, nous vous conseillons de la
battre, en position plate, sur une éponge
épaisse imprégnée d’eau.
L’élasticité de l’éponge et la pression de
l’eau faciliteront la sortie des résidus par
le haut de la Plaque. Au moyen d’un
chiffon humide, nettoyer l’intérieur du
Corps de hachage et le logement du
corps d’amenée, en veillant particulière-
ment aux recoins, au moyen d’un
instrument pointu.  A l’aide d’un chiffon
humide exclusivement, nettoyer
soigneusement le couvercle de la trémie.
Pour le nettoyage du corps de la
machine, utiliser uniquement un chiffon
avec eau tiède et détergent neutre. Ne
jamais utiliser de produits à base
d’hydrocarbures, d’alcool, de solvants (en
particulier sur les parties en plastique,
telles que le plexiglas de protection et le
couvercle de la trémie). Afin d’éviter tout
risque de panne de nature électrique ou
électronique, ne mouiller ni le thermostat
ni les boutons de commande.

Ne jamais utiliser de jets d’eau
directs.

Nettoyer soigneusement les parties en
contact avec la viande. Il est possible que
s’accumulent sous la machine des
déchets de viande, poussière et autres.
Nettoyer soigneusement, toujours avec
une éponge humide, en se servant au
besoin d’un outil long et pointu ou en
soulevant légèrement la machine.
Ne remonter les accessoires lavés que
lors de l’utilisation suivante (voir
page 18).

Contrôles périodiques

Contrôler l’usure de la plaque (n°2 photo
R) et du couteau (n°4 photo R).
Le remplacement de la Plaque et du
Couteau doit se faire quand la somme de
leurs deux épaisseurs s’est réduite
d’environ 3 mm par rapport à la valeur
initiale qui est de (pour la version
Enterprise):
couteau pour 22  - mm 20
couteau pour 23  - mm 23
Remplacer les deux éléments.
Le Couteau et la Plaque doivent
toujours fonctionner ensemble.
Sur les types Unger, remplacer par la
même occasion toutes les autres Plaques
et tous les autres Couteaux.

mente con un utensile sottile. Sempre
con uno straccio umido detergere con
cura il coperchio sulla tramoggia.  Per il
corpo della macchina usare solamente
acqua tiepida e detergente neutro, con
straccio umido. Non usare mai prodotti a
base di idrocarburi, alcool, solventi (in
particolar modo per gli elementi in plasti-
ca come ad es. la vetrina e il coperchio
tramoggia). Onde evitare guasti alle parti
elettriche ed elettroniche, evitare di bagna-
re il termostato e i pulsanti di comando.

Non usare mai getti d’acqua.

Prestare particolare riguardo alle zone a
contatto con il prodotto. Sotto la macchi-
na si possono accumulare detriti di car-
ne, polvere e altro. Pulire accuratamen-
te, sempre con spugna umida, aiutando-
si eventualmente con un arnese lungo e
sottile o sollevando leggermente la mac-
china. Rimontare gli accessori lavati, so-
lamente in occasione di una successiva
lavorazione (vedi a pag. 18).

Controlli periodici

Controllare l’usura della Piastra (n°2 foto
R) e del Coltello (n°4 foto R).
La sostituzione della Piastra e del Coltel-
lo deve venire effettuata quando la som-
ma dei loro due spessori si è ridotta di
ca. 3 mm rispetto al valore iniziale am-
montante a (per la versione Enterprise):
P Coltello del 22  - mm 20
P Coltello del 32  - mm 23
Sostituire entrambi i componenti.
Coltello e Piastra devono sempre la-
vorare abbinati.
Nei casi Unger sostituire contemporane-
amente anche tutte le rimanenti piastre e
coltelli.
