The following cleaning procedures ensures the fryer is sanitary while keeping product quality high
and downtime to a minimum.

This appliance requires care and proper maintenance. The table below provides a summary of
scheduled maintenance. The following table provide preventive maintenance procedures to be
performed by the operator.

This appliance is equipped with a WIPE mode. This mode gives 10 seconds to wipe the control board
clean of any debris without activating the control buttons.
1 1.. Press the Info (information) button twice.
2 2.. Press the √ button to confirm.
3 3.. The control board starts a count down timer set for 10
seconds.
4 4.. Once the 10 seconds expires, the control returns to
the previous screen.

Always clean the fryer after the oil has cooled, and be sure to cover the vat(s) with a clean sheet pan
to protect the oil from debris, water and soap splashes during the cleaning process.
• Empty the condensation drain pan and rinse it out with clean water.
