INSTRUCTIONS FOR CLEANING AND MAINTENANCE
It is essential to carry out all the necessary and relevant cleaning operations in order to increase the service
life of the machine and to ensure its correct operation. To ensure the efficient washing of the dishes, the
dishwasher must be perfectly clean and disinfected.
Contact a cleaning product distributor for detailed information about the
methods and products available for the regular disinfection of the machine.
Only use products suitable for use with industrial dishwashers.
The guarantee does not cover damage caused by the incorrect use of chemical
products.
When handling chemical substances, the product safety instructions and
recommended doses must be observed. Use protective clothing, gloves and
safety glasses when handling chemical products.
Before carrying out cleaning or maintenance work, the dishwasher must be
disconnected from the mains electricity supply via the magneto-thermal switch
and the mains switch

6.1
Cleaning the appliance
The appliance is made of high quality stainless steel. However, under certain conditions, corrosion may
appear.
To ensure the stainless steel surfaces are always free from corrosion, only cleaning products which are
suitable for cleaning industrial dishwashers must be used in the correct doses.
Abrasive or corrosive products, acids, solvents, or CHLORINE/HYPOCHLORITE-based detergents
must
never be used
. To avoid damaging the appliance, do not exceed the recommended dose, and rinse with water
after cleaning.
Do not use
scouring pads or other abrasive materials during cleaning.
WARNING
: Do not use water jets, pressure cleaners or steam cleaners to clean the machine or the
surrounding areas as these may damage the appliance and would result in the loss of cover under the
guarantee.
After switching off and draining the machine, wait approximately 10 minutes until the inside of the appliance
cools. Caution, the heating element of the tank may still be hot.
Raise the door and check that it remains fastened by the door fastening system.
Remove the curtains and clean them under a strong jet of water with a nylon brush.
Remove the trays and filters and clean them under a strong jet of water with a nylon brush.
Remove the upper and lower wash arms and carefully clean the arms and nozzles. Rinse with water.
Clean the openings of the rinse arm nozzles with a pin.
Thoroughly clean the tank; food waste attached to the tank or the heating element should be removed with a
brush. A hose with water from the mains may be used inside the machine, taking care not to wet the exterior.
Clean the external surfaces of the appliance when it is cold using a sponge or damp (not wet) cloth and non-
abrasive products specially for stainless steel. DO NOT USE JETS OF WATER.
Replace all the parts in the correct position.
Leave the door open to help dry the inside of the machine and to prevent bad odours when the machine is not
in use.
If the water used is too hard and is not treated correctly, lime scale may build up on the surfaces and the
internal parts of the appliance, affecting the results of the wash.
Signs that the water is too hard include:

White marks on the dishes.
•
Dirty dishes even after the wash.
•
Build-up of lime scale on the surfaces of the appliance.
Damage due to lime scale is not covered under guarantee.
6.2
Routine maintenance
•
Check daily that the wash/rinsing arms are correctly positioned and fastened.
•
Check that the curtains are correctly fitted (long curtains at the exits and short curtains in the interior).
