Pinto Bean Dip
Part 1
1 pound Pinto Beans
8 cups Water
4 teaspoons Vegetable Oil
First, sort beans: remove and discard any foreign material or shriveled/discolored beans .
Then rinse beans with cold water . Next, place the sorted and rinsed beans in the inner
cooking pot of the EZ Bean Cooker; add the water and vegetable oil . Select the Pinto
Bean button on the cooker, then push Start .
Part 2
3 Tablespoons Olive Oil
1 teaspoon Garlic Powder
1 ½ teaspoons Onion Powder
1 teaspoon Salt
Once the cook cycle is complete, use caution to manually release the pressure . Remove
beans with a slotted spoon and put in a food processor, reserving some liquid . Add
remaining ingredients to the food processor . Puree until the mixture is smooth . If
needed, add some of the reserved cooking liquid to improve consistency . Serve with
crudités, tortilla chips, pretzels, or spread on a sandwich .
This pinto bean dip can also be used as one of the layers in 7 Layer Dip recipes . For
example, try making this traditional favorite by layering the following ingredients in a
clear baking dish:
Pinto Bean Dip (recipe above)
1 ½ cups Sour Cream
1 ½ cups Guacamole
1 ½ cups Salsa
¾ cup Black Olives, chopped
¾ cup Green Onions, chopped
1 ½ cups Shredded Cheddar Cheese
Serve with tortilla chips .
