Closing Procedures
To remove frozen product from the cylinder(s):
1.
Place the selector switches in the
"CLEAN" position.
2.
Let the beaters run for 5 minutes. This
will allow the product in the cylinders to
soften.
3.
Place a clean, sanitized container
under the dispensing nozzles.
4.
Remove the pickup tubes from the mix.
5.
Very slowly
open the spigots and
dispense the semi-frozen product until
it quits. Use this product for making
pints, quarts, and/or novelties.
6.
Close the spigots and place the pickup
tubes into a container of warm water,
allowing the pumps to fill and pressur-
ize the cylinders.
7.
Very slowly
dispense the warm water.
Repeat until the dispensed water is
clear.
8.
Drain off the warm water and place the
selector switches and pump switches
in the “OFF” position.
9.
Prepare 4 gallons (15.2 liters) of
sanitizing solution for each cylinder.
Sanitizing solution must be mixed
according to manufacturer’s instruc-
tions to yield 100PPM available chorine
solution (example: Stera-Sheen Green
Label). Use warm water (100-110°F or
38 to 43°C) to sanitize.

Insert the pickup tubes into the sani-
tizer solution.

Open the spigots and open the air relief
plugs by pulling up until the plugs
9.1 Draining Product
At the end of each day of operation, the freezer must be rinsed and disassembled. The parts
must be washed, rinsed, sanitized, and prepared for reassembly.

Place the pump switch in the “ON”
position. When sanitizer flows out the
spigot, leave open for 2 minutes, then
close the spigot. When sanitizer flows
out the bottom of the head, close the
plugs and allow the cylinders to
pressurize.
Important:
Do NOT use the “AUTO” position with
sanitizer or water in the cylinder. The
freezer will be damaged.
12.
Place the selector switch in the
“CLEAN” position and allow the beater
to run for
10 minutes
.
13.
Slowly open and close the spigots ten
times. Open the spigots and allow the
pump to push the sanitizer out of the
cylinder. Leaving the spigots open,
turn the selector switches to the
“OFF” position.
14.
Leave the pump switches in the “ON
position and allow the pumps to push
all remaining sanitizer out of the
cylinders. When the sanitizer quits
flowing, turn the pump switches to the
“OFF” position.
CAUTION
Make sure freezer is depres-
surized before proceeding.
