• Your choice of fat is also very important. Preferably use:
- Butter, clarified butter or butter oil
- Margarines that are suitable for frying (regular or liquid)
- Oil that can be used at high temperatures: peanut oil, corn oil, or specially blended
oils for hot dishes.
Attention:
avoid the use of extra virgin olive oil! This type of oil starts to burn at a
temperature of 150°C/300˚F. You could use refined olive oil for a short, non-intensive
frying spell (max. 180°C/350˚F).
• If using a frying pan/skillet with a non-stick coating: Never use sharp objects and do
not cut anything in the pan. We recommend cooking utensils made of nylon, silicone
or wood. Never store the pans by just stacking them; always use pan protectors. It
is preferable to hand wash the pans, this will considerably extend their service life.
• Boiling Tips: Thanks to the high quality of our products and our tightly sealing lids, it
is not necessary to use large quantities of liquids for boiling, unless you are preparing
a dish that requires a lot of water (pasta, rice). Less liquid means a shorter cooking
time and less energy used.
3. WARNING
• Never leave an empty pot or pan on the hob/element, and never let it boil dry. This can
quickly lead to irreversible damage to the base of the pan.
• The metal handles can become hot. Always use oven cloths or oven gloves.
• Do not add salt until the water is boiling. Any salt that has not dissolved can cause tiny
pits on the surface of the pan.
• Do not keep acidic foods in your cookware for longer periods of time. These may
cause discoloration.
• Make sure you always lay a hot lid upside-down on the glass plate of your hob.
Otherwise when cooling down, a vacuum may arise making it difficult to remove the lid.
• Keep children away from the cooking area and from hot cookware.
• Do not allow handles to extend beyond the edge of the stove.
• Always have a fire blanket and fire extinguisher within reach. Many domestic fires are
caused by leaving cookware unattended.
4. MAINTENANCE TIPS
• Always leave a hot pan to cool down before cleaning it. The extreme difference in tem-
perature between the hot pan and the colder water may cause permanent deformation.
• Simply clean the pan with water, dish liquid and a soft sponge, brush or cloth. Never
use bleach, abrasives or steel wool.
• Especially for frying pans, woks and grill pans: If the food residue is not used for the
sauce, leave the pan to cool down for a minute and pour sufficient water in the pan
to cover the base and residue. This will soak the burnt residue and make it easier to
clean the pan.
• Dishwasher detergents have become increasingly aggressive and may erode the alu-
minum of your pan. We recommend that you do not put your cookware in the dish-
washer. Always wash pans with a non-stick coating by hand. Products with a closed
rim are dishwasher safe.
• To remove lime scale or other mineral deposits clean the pan with a splash of white
vinegar or lemon juice. Then wash again with water and dish liquid.
• To remove stubborn, burnt food remains, it is advisable to soak the pan in water and
dish liquid (if necessary all night). Then clean with a soft cloth, sponge or brush.
• In extreme cases of stubborn discoloration or burnt fat on stainless steel, you can also
use a nonabrasive cleaning agent.

5.1.1. Suitable for all cookers, including induction
All Demeyere products can be used in the oven and on conventional heat sources such as
electricity and gas; they are also suitable for hi-light, AGAs, vitro ceramic hobs and induction.
5.1.2. Base technology
All Demeyere products are manufactured with a 7-ply base, an aluminum Radiant® base
or made of a multi-layered material up to the edge. There are different technologies,
depending on the type of product and/or the range:
A. InductoSeal® base
The 'InductoSeal®' base consists of seven layers. A copper disc, hermetically embedded
in the base, ensures optimum heat distribution and provides a heat-conducting surface
which is up to 33% larger than a traditional base. InductoSeal® allows controlled
heating at low heat and is energy-saving.
