Baking

Swiss roll with

assorted ﬁ llings

Mango cream

Peel the mangos, cut the

ﬂ esh off the stone, and

purée with the lime juice, sugar
and grated orange zest.

Soften the gelatine in cold

water, then heat on the hob

until dissolved. Stir a little of the
fruit purée into the gelatine,
then pour into the rest of the

purée and stir well. Leave in the

fridge until it has set enough for

a spoon dragged through it to
leave a mark.

Whip the cream until stiff
and fold into the fruit mix-

ture. Place in the fridge to chill.

Spread evenly over the cake.

Roll up and dust with icing

sugar shortly before serving.

Advocaat ﬁ lling
