Score the meat with a sharp
knife. You may prefer to ask
the butcher to do this. Mix the
oil with the salt and pepper and
brush the meat with it. Place on
the rack and roast (see below
for settings).

juices in the universal tray
and then sieve the stock into a
pan.

Heat it up on the hob and
thicken as required with
crème fraîche and cornfl our.
