APPLE AND RHUBARB MUFFINS
Ingredients
1 green apple, peeled and roughly chopped
500g rhubarb, roughly chopped
60g butter, cubed
2 tsp cinnamon, ground
360g brown sugar
1 tsp vanilla essence
2 eggs
300g sour cream
300g self raising flour, sifted
1 tsp baking powder
Preparation
1) Pre heat oven to 180°C. Fill a 12 capacity muffin tin with paper muffin cases.

Transfer to a bowl and set aside.
4) Place butter, cinnamon, sugar and vanilla essence into the bowl and mix for

7) Fold mixture through the rhubarb and apples with spatula.
