MUFFINS
Ingredients
200g caster sugar
3cm strip orange rind
4 eggs
200g butter
200g plain flour
3 tsp baking powder
pinch of salt
caster sugar, extra, for sprinkling
Preparation
1) Pre-heat oven to 180°C. Fill a 12 capacity muffin tin with paper muffin cases.
2) Place sugar into the bowl and process for

4) Put mixing tool into place. Add eggs and process for

5) Scrape down sides of the bowl using the spatula. Combine for

6) Add butter and beat for

7) Add flour, baking powder and salt. Combine for

8) Pour mixture halfway up the sides of the paper muffins cases.
Sprinkle with extra sugar and bake for 25 minutes or until golden.
Notes
Chocolate Muffins can be made by adding 50g of melted dark chocolate to the mixture.
