POT ROASTED BEEF
- Serves 4
Brisket of beef
675g, cut into 4 equal pieces
Salt and black pepper
Freshly ground
Vegetable oil
1 tbsp
Beef stock
400ml
Red wine
200ml
Onion
1 small, peeled and chopped
Garlic
1 clove, peeled and sliced
Celery
2 sticks, trimmed and chopped

1 small, peeled and chopped
Bay leaf

• Toss the beef in a generous amount of seasoning. Preheat the oil in a large frying pan then add
the beef and sauté for 3-5 minutes until well browned on both sides. Transfer the beef to your
Microwave Pressure Cooker.
• Add all of the remaining ingredients to the cooker, place the lid on top and seal.
• Place the cooker into the microwave and cook on HIGH for 50 minutes.
• Carefully remove the cooker from the microwave and allow the pressure to drop. When the pressure
has dropped, remove the lid and serve the beef, using the remaining cooking liquor as a base for
soups or stews.
