VANILLA BISCUITS
- makes around 80 small biscuits
• Preheat your oven to 180ºC or gas mark 4.
• Cream together the butter and sugar until it is it is a pale colour, using a food mixer, electric hand
mixer or in a bowl with a wooden spoon.
• Add the egg and the vanilla. Then stir in all the dry ingredients, a few spoonfuls at a time until you
make smooth, stiff dough.
• Set up the machine to press biscuits, with the biscuit press attachment, selecting the shape
you require.
• Put the biscuit mix onto the tray and use the feeder to load it into the nozzle.
• Gently feed small quantities through the machine.
• Switch on the machine and use one hand to push the dough through the machine with the pusher,
use the other hand to catch the pressed mix.
• When you have about 30cm of mix, switch off the machine and cut the mix away from the
biscuit press.
• Slice the mix creating small biscuits.
• Lay the biscuits on non-stick baking sheets with a few centimetres of space between them.
• Bake for 8-10 minutes, until they start to brown at the edges. Remove from the oven and allow to cool
a little, before placing them on a cooling rack until completely cooled.
• Dust with sieved icing sugar.
For chocolate biscuits replace 50g of the flour with cocoa powder.
You can also remove the vanilla and add other flavourings, for example almond essence, rose water or
orange flower water to make lovely biscuits to accompany desserts.
