RECIPES
All spoon measurements in these recipes use standard metric measuring spoons. For
example 1 tsp. is 5ml, 1 tbsp. is 15ml. We recommend you use a set of measuring spoons
for accuracy.
BEEF BURGER WITH BLUE CHEESE MELTING MIDDLE
- makes 12 burgers
Onion
1 large, peeled and cut into 8-12 pieces
Vegetable oil
1 tbsp.
Beef, stewing steak or chuck steak
1 kg
Stout
(or stock for an alcohol free version)
5 tbsp.
Brown bread roll
1 roll, broken into pieces
Parsley
4-5 stalks, stalks removed
Salt
1 ½ tsp.
Freshly ground black pepper
½ tsp.
Blue cheese, firm textured
240g
Ingredient
Quantity
• Set up the machine to mince, with the coarse mincing disc.
• Mince the onion. Add the oil to a frying pan, and fry the onion for 5-6 minutes until golden.
• Mix the beef and stout or stock together in a bowl. Add the bread, parsley, salt and pepper. Gently
feed small quantities through the machine.
• Cut the cheese into 20g pieces.
• Divide the beef mixture roughly into 12. Take one portion, place a piece of the cheese in the centre
and shape the meat around it to form a burger shape, making sure the cheese is completely
encased. Repeat to make all the burgers.
• Refrigerate the burgers for 15 minutes, then grill, fry or barbecue over a medium heat until cooked.
