under the fish. The dehydrating time completely depends on your personal preferences. If
you want to store the fish, then let the filets or slices on the dehydrator until they get firm
(approx. 2-3 days).
Tip:
Try eating warm just slightly dehydrated fish. If you lay your fish on the dehydrator in
the morning, it is ready for dinner (approx. 6-8 hours). There is a thin skin on the outside,
and on the inside, you will enjoy the warm tender meat that has already become aromatic
and more intense.
Anchovies:
Dehydrate very easily and are not gutted, but simply laid whole onto the
screen.
Herring/Mackerels/Sardines:
Scale the fish with a knife from the tail towards the
head. Then remove the head, gut the fish, and thoroughly clean it.
To preserve filets: After scaling the fish, cut into it from directly behind the gills to the spine
and then flat along the edge of the back to the tail. Cut on both sides, then lay both filets on
the screen (don’t forget the kitchen roll!).
Or: Remove the head, gut the fish, and then remove the spine with your fingers by carefully
moving your fingers between the meat and the bones.
Afterwards, the skin is pulled from the filets. The fish is dried lengthwise. You will preserve a
light silver coloured fish that looks attractive on a buffet.
Tuna/Swordfish:
Large fish are dried in slices that are between 1 and 3 cm thick, as
you wish.
Pickling:
A unique special flavour is given to meat and fish by marinating or brushing it with
spice and pickle brines. You can use practically any combination of the following ingredi-
ents: soya, Worcestershire, tomato, or barbecue sauce; garlic, onions, or curry powder; herb
salt or pepper. The curing time can range according to your own taste from a few minutes
to 12 hours.

dehydration.
You can create a true gourmet dinner with dehydrated meat with homemade tomato powder
and dried vegetable bits! Cook your ingredients with sufficient water on a camping stove until
